Beef Tagine
Ingredients
1 1/2 lbs. eye of round roast cut into chunks
1 teaspoon paprika
1 teaspoon cayenne
1 teaspoon cinnamon
1/2 teaspoon ground ginger
2 garlic cloves crushed
2 tablespoon tomato paste (purée)
4 shallots quartered
2 large carrots cut into 1 cm cubes
2 tomatoes cut into cubes
1 tablespoon of chopped parsley
1 tablespoon of chopped cilantro
Some Salt pinches to taste
Cooking Directions
Mix together paprika, cayenne, cinnamon, ginger, garlic, tomato paste.
Add the beef and turn in the mixture. Cover and leave in the refrigerator overnight.
In a heated skillet, brown the shallots, carrots, and meat.
Add in the remaining marinade, chopped tomatoes, parsley, cilantro, salt.
Cover and cook over low heat for 3-4 hours until the beef is tender.
